Heeey everyone! Did you all enjoy your weekend? Don’t you wish the weekend could be longer (don’t we always wish this everytime?) Ha!

Anyway, I had quite productive and fun weekend. First of all, we went shopping for a carry-on luggage for my upcoming business trip to Atlanta.

It didn’t take us long to find a decently priced carry-on luggage from Ross Stores.

I usually don’t shop at Ross but sometimes you can’t beat their lowly priced items. If you are lucky enough, you could score big time getting a brand name item in low price. Of course you have to do a lot of digging to find that gem.

Of course since I know I’ll be away from home for a couple days, I am making sure I ordered quite a stash of Paleo-friendly beef jerky from Primal Pacs.

Another fun stuff that I did was shopping for my Halloween costume! Apparently, my colleague mentioned that there will be a costume party at the company event in Atlanta. It wasn’t required but surely it’ll be FUN to attend once in a while! I’ve never bought Halloween costume before nor attended any Halloween costume party so it was such a mind blowing how outrageously pricey these costumes are! And since this is an office event, we have to be selective in our costume choices (has to be office appropriate so anything sexy are totally out – well it’s not like I’ll choose any sexy looking costume anyway).

After digging through around, I finally scored a $20.00 Gothic Princess costume. Not too bad actually. 😛

On Sunday morning I had a very good workout that totally killed my upper body and abs! After ward, I took the mushy sweet potatoes that I made last week and turned them into Sweet Potato Pancakes aka Sweet Delicacies but minus the ChoCoco Buttercream though plus a small piece of purple yam and some left over mince meat omelet slices.

After being a kitchen slacker, I contributed Express Beef Curry Stew, which turned out yummy and everyone loved it! Hubby K mentioned that I haven’t lost my cooking touch yet despite haven’t cooked anything for the past 2 weeks.

After we finished lunch and did dishes, we did our house chores (he was in charge of bathrooms, I was in charge of vacuuming the house and doing laundry) and rewarded ourselves with a small bowl of grapes and persimmon.

Hubby K went to his parents’ place for a family dinner gathering and I stayed behind since I needed to go to bed early for work tomorrow. Again, not being kitchen slacker, I made a quick stir-fry Chinese Kale (Gailan) with chicken meat seasoned with Five Spice Powder, coconut aminos and sesame oil for dinner.

Plus I made Oven Roasted Tomatoes after I saw Nom Nom Paleo posted about it.

Apparently I wasn’t supposed to slice the tomatoes thinly lengthwise. Instead just cut them in half lengthwise. No wonder mine turned out scrawny, but still yummy though! I only seasoned mine with salt, pepper and Avocado oil and roasted in 400°F for about 25 minutes (flipped once)

*sigh* I missed my weekend already.

Any readers from Atlanta or know a bit about Atlanta? Too bad I don’t know where I’ll be staying exactly so it’s hard to pin point any Paleo friendly food place.
