Ingredients:
1 Tbsp coconut oil
1 cup chopped onions
1 Tbsp curry paste

1/2 lbs – 1 lbs grass-fed beef stew meat – slice into thin stripes

1 cup coconut milk
1 tsp Red Boat Fish Sauce (optional)
Salt to taste
1 cup chopped carrots* or any of your favorite veggies

Additional herbs (I’d include these if I wasn’t pressed in time)
Lime leaves
Lemon grass

*The chopped carrots that I used were pre-cooked thus I put them towards the end. If you are using raw chopped carrots, I suggest you cook this prior the beef.

Directions:
1. Heat the skillet in medium high heat with 1 Tbsp coconut oil.
2. Saute the chopped onions until translucent.
3. Add a bit more coconut oil then “fry” the curry paste until fragrant
4. Mix in the beef stripes – keep stirring until the beef almost cooked
5. Mix in the coconut milk, fish sauce, salt and chopped carrots. Adjust the taste accordingly.

Serve with on the bed of your favorite veggies! 😀
