Turning a Failure into a Success
Hey all, thank you so much for the encouragement on my last post. Totally appreciate it. This job hunting definitely no walk in a park, and I gotta tell you today I didn’t get a single call, although I submitted more resumes to some places. After some thinking, this week is a long weekend so probably some people already took off early to start their long weekend…oh well.
Anyway, the biggest highlight for me today was my successful attempt to save my failed paleo mayonnaise to make a yummy No “Crabs” No Problem “Crab” Cakes that I had for dinner earlier.
Trust me, I finished that entire plate even though I wasn’t that hungry for dinner, thanks to this cup of Full Fat Voskos yogurt I had for my afternoon snack, eaten with some strawberries
My lunch was great as well. I made a quick chicken tandoori by pan frying the chicken breasts marinated with tandoori seasonings, then dumped in 4 cubes of frozen coconut milk, juice from 1/2 lemon, and cooked them until all the sauce was reduced. Super lemony and coconutty tandoori chicken..mm..mm…YUM!
Paired them with some left over Stir Fry “Vermicelli” Noodles and some veggies.
And what I had for breakfast? Just the usual over-baked Japanese sweet potato (super mushy) and left over Spicy “Sausage” Beef Steaks. 😀 Perfect post workout fuel.
I’d like to share something with you guys. So far I think I’ve been pretty good maintaining a clean Paleo diet/lifestyle and I feel great about it. So what’s the problem, you ask. Ok, here’s the thing. I actually been thinking of doing Whole30 and recently I read that Whole9 just released their new Whole30 v.4 and a lot of people will be starting their Whole30 on July 1. For those who are not familiar with Whole30, you can read it all here. Long story short, it’s a stricter Paleo – which means you have to be paleo 100% for 30 days straight without any slips (unless you’re literally slip and fall face down on the box of donuts like Whole9 folks said).
So why bother to do this if your paleo approach so far has been to be almost so damn perfect?
Well, just say I’m a dork and quite perfectionist and I do want to challenge myself, how discipline I am. It’s true that I do have a tendency to actually derail from something if I’m being restricted and I’m more stay on track if otherwise. Weird huh? So anyway, wish me luck for the next 30 days.
Btw, I will have a family gathering with my relatives this coming weekend, which will be my first challenge to stay on 100% Paleo. Worry not, I already prepared my own stuff to bring for the potluck. At least I’ll be able to have 3 dishes, which what I will bring 😀
