Phew, Day 1 was a breeze so how about Day 2? Well, I’d say it’ll be a challenge since I had a potluck gathering with my relatives for dinner. But as a super organized person, I already planned the dishes that I’d bring to the potluck. Before we get there let’s start from the beginning, shall we?

I had another amazing morning workout despite the hot and humid weather. In fact today was the first time I ran as my warm up prior Bodyrock.tv workout. Truth to be told, I am not a big fan of running and I know I’m suck at it. However, this morning, to my surprise, I was able to run in moderate pace without catching my breath for the entire 1 mile trip, which took me about 9:14. Not too shabby huh, despite I haven’t run for ages!

Fueled up with an omelet filled with shredded Balsamic Herb Chicken Breast paired up with one small baked Japanese sweet potato and the usual tea.

Afterward, I was a cooking mania, preparing at least 3 dishes to bring tonight. After doing some thinking couple days ago, I decided to pick 3 of my simplest and fool proof recipes.

First: The famous Roasted Curried Cauliflower (God, I owe this BIG TIME to Nom Nom Paleo!!) I used 2 big cauliflower heads!

Second: Baked Chicken Legs Seasoned with Chipotle “Curry” Chives Seasonings

Third: Baked Chicken with Caramelized Onions

And additionally, I also made batches of Coconut Chips as my emergency snacks, in case I got hungry later. (2x of this container)

While in between, I also squeezed in some time to prepare lunch. I wasn’t in a mood of cooking separate veggie and meat dish, so I decided to do Beef Stir Fry Veggie Noodles – yay for protein and fiber in one pot! No extra pans to wash!

Love my lunch plate, although I had to share 1/2 avocado with Hubby K since it was the last one.

I had 1 1/4 x of what you saw above (minus the avocado). Super good!

I finished preparing the potluck dish by mid afternoon, which was great so I had some extra time to clean up and put away the clean dishes. I hate seeing dishes piling up on the counter cause they just make the entire place look cluttered! Ugh! Afterward, Brother A, Hubby K and I got ready and went to my cousin’s place for the potluck.

As I suspected, there was literally almost nothing I could eat that’s Whole30 compliant, except this bowl of salad (minus all the dressings, feta cheese and the candied walnuts)

All the dishes pretty much are cooked with vegetable oil which already make them out of Whole30. Glad I brought 3 dishes that I could eat :D.

And there were some tortilla chips (didn’t have any) with Pace Picante Mild Salsa sauce, which I had a bit as my salad dressing for my second plate (only a little bit). I was a bit full from snacking that coconut chips prior dinner.

I also had a small bowl of Chinese herb soup (no pic) after examining them, I’d say they’re OK for Whole30.

Cousin Dv, his wife, my niece (my other cousin’s daughter) and Brother A were having a lot of fun playing Xbox Kinect. Hubby K and I were mostly watching until towards the end we got a bit pressured to play a bit. I could tell you, I’m suck in those dancing game.

One of my aunt made these chiffon cakes and gave us 2 huge chunks to bring home. ARGH! Temptation! Although I generally don’t have sweet tooth, homemade goods are pretty tempting. Worry not, I didn’t have any bite and won’t for the rest of July.

Cousin Dv’s mom who came visiting from Taiwan, gave us these Chinese Pineapple Cakes. These I could resist.

Came back home I felt like munching so I literally finished one container of coconut chips.

So there you go, my Whole30 Day 2 : not so bad 🙂
