Sunday Meal Preparation
Now that both of us would be working fulltime again, it’s time for me to be slaving a bit in the kitchen during Sunday morning *sigh*
Not to mention I actually got up super early (like 6 am!) to get things started, although I didn’t really do anything until an hour later. I started off with a morning workout, followed by this yummy breakfast/post WO meal.
I LOVE LOVE LOVE LOVE purple yam so much that I had extra munches after the pic was taken. Sometimes the portion that you see on this blog might not always reflect on the actual portion that I had. Sometimes I had a little extra sometimes I didn’t.
After enjoying my cuppa tea, I started off preparing Paleo Chicken Meal after being inspired by an article from People’s Magazine that I read while waiting for my haircut in a salon on Saturday afternoon.
Plus I pre-washed and pre-seasoned a batch of broccoli to make Roasted Broccoli. I kept some in fridge so whenever we want, we could just roast these guys instead wasting time to cut, wash and season them prior cooking.
We also had some leftover from Saturday’s lunch: mixed squash and chicken stir-fry, which was great!
After I filled up my tummy, it was time to continue whatever I did. It’s been a while since I made Lotus Root Soup.
Hubby K also did his part by cooking a batch of ground beef that he got today from Sprouts Market. It’s so convenient to have a stash of emergency protein in our fridge so we could always whip up a quick meal after coming back from work.
Also as usual, I cooked lots of sweet potatoes, only this time they turned out to be way too mushy! Apparently the orange colored sweet potatoes cook a lot faster than the purple and Japanese yams.
From this point, I’m sure you could figure out what’s on my dinner plate. No? Argh..I thought I’ve made it easy already!
Phew! Let’s see how long these food would last on us!
