I was inspired to create this dish after I saw an article from People Magazine while waiting for my haircut in the salon.

It was pretty much an entire meal recipe. Usually I only did a recipe of one dish but this time I’d like to do it a bit differently. Besides, it has been AGES since I did a recipe, huh?

Paleo Chicken Meal Made Easy (inspired by People Magazine Hell’s Kitchen Recipe)
Ingredients:
For the Roast Chicken
2 chicken legs, 2 chicken breasts, 2 chicken wings (basically a cut up whole chicken) – skinned and most fat trimmed
1 tsp salt
1 tsp black pepper
1-2 tsp garlic herb seasonings (basil, lemon peel, oregano, garlic powder)
2 Tbsp coconut oil

For the “mashed potato”
1 cauliflower head
1 tsp salt
1 quart of water
1-2 tsp Fox Point Seasonings from Penzeys Spices or you can make your own or use any of your favorite seasonings!

Directions:
For the chicken
1. Rub the chicken with the marinate and let them sit for about 1 hour or overnight (for best results).

2. Heat the skillet with 2 Tbsp coconut oil in medium heat.

3. Pan sear the chicken – enough to brown them

4. Transfer them to the wire rack with foil lined baking sheet underneath. Bake in 400°F for about 30-40 minutes, flip them over once.

5. Remove from heat and let them cool a bit before devouring.

For the “mashed potatoes”
1. Mix 1 tsp salt with water and cook the entire cauliflower head in a pressure cooker for about 15 minutes with low heat (low enough but still keep the pressure on). No pressure cooker? Go get one, now! Cut up the cauliflower into chunks and boil them until they are tender.

2. Drain the cauliflower and mash them with your potato masher or if you are fancy, you can use a hand blender or food processor.
3. Season with Fox Point Seasonings according to taste.

Lastly, put everything together and your Paleo Chicken Meal is ready! Bon Apetit!
