    i never liked this soup as a kid, but now i really enjoy it. thanks for sharing your recipe. i like that you used dried scallops. will have to try that next time.

    The lotus roots are so pretty! I’ve never had them before, but something that nice looking MUST taste good.

    You have to tried making lotus root chips. These are my favorite, they taste exactly like regular potatoe chips. Lay them out on a cookie sheet, season and sprinkle with some oil toss them in and make ’em crunchy!

    I’ve tried lotus roots only once, but I didn’t like them no much. 🙁 I think it may have been because bought them in a can, I see if I can get fresh ones and try them again. 🙂

      Hmm..it’s hard to describe but I’ll try my best. If it’s cooked properly (kinda “al dente”), it has a hint of sweetness – kinda like crunchy potato but not starchy..Hope it makes sense
