Another Day of Good Meals
I went to be a bit late so I got up a bit later than usual so I quickly tackled the last workout of this week which I finished in a pretty good time. Since it was already late morning, I kept my breakfast/post WO meal small so I won’t push off my other meal time.
For lunch I made a batch of Roasted Curried Cauliflower from 2 big cauliflower heads. These pretty much took care our veggies of the day.
For the protein, I made Bison Balls from 2lbs 100% grass-fed ground bison that I got from Henry’s Market. *sniff* I’m so sad the game meat sale is over. These balls were relatively simple to make.
I used similar ingredients from BoarBaconlicious Meat Loaf (chopped carrots and green onions) but I added some coconut oil since bison meat is pretty lean and I seasoned the meat with Indonesian spice mixture (or you can use all spice powder). I didn’t use any coconut flour in fear the meatballs would be too dry.
Pan fry them in coconut oil just to brown then place them in a baking dish, cover with foil and bake in 350°F for about 10-15 minutes. See, it’s very simple!
And those pretty much took care our protein meal of the day as well. See it’s so convenient to cook in bigger batch so you don’t need to slave away in a kitchen all the time!
I topped the meatballs with Homemade Tomato Sauce and added sliced whole avocado. Here’s my lunch plate.

For the entire afternoon, I was sweating my ass off by vacuuming the house and the stairs. Prior to that, I had a bowl of grocery bought grapes. They weren’t that sweet but I didn’t mind.
I wasn’t too hungry during dinner, so I kept it small. Hubby K was in a mood of having some bacon and sunny side up eggs, so he shared one of the bacon with me. Topped the meatballs with Homemade Almond Butter with Flaxseeds, I was one happy cave girl devouring her dinner bowl.
Do you always have a dream when sleeping? Lately I’ve been having dreams. Not sure if it’s supposed a good thing, meaning I slept really well or vice versa. Any thoughts?
