I know I’ve been slacking off a bit lately with my posts so hopefully this fully loaded food porn post will make it up. 😀

So wonder what I had for yesterday? I didn’t really have any breakfast since I didn’t do any workout. Plus I wasn’t feeling hungry at all in the morning, even after my 30 minute walk under the sunshine outside the house. Why should I eat breakfast just because the famous statement “breakfast is the most important meal of the day” said so if I didn’t feel hungry, right?

Ok, I did have something prior lunch cause I needed some time to prepare my lunch but didn’t want anything heavy so I opened up one of Primal Pacs grass-fed beef jerky samples that I got from AHS.

It was super GOOD! The package contained some jerky, raw nuts and dried fruits which were sweetened with fruit juice! No added sugar at all! Plus this jerky is Whole9 approved and also Whole30 approved! The jerky wasn’t too dried, not too sweet and not overly salty either, which was perfect for me! Gosh, now I wanna order more!

Thank goodness for the jerky, I managed to contain my hunger until lunch was ready. I made some steak seasoned with homemade Dukka seasonings, coriander, salt, black pepper and lemon juice topped with Coconut Cream Concentrate that I recently ordered from Tropical Traditions, one ground elk burger patty, and roasted mixed bell peppers.

It was my FIRST time trying coconut cream concentrate (or coconut butter) and let me tell you I don’t think I’m such a fan of eating it straight out from the jar. It tastes a bit too heavy and creamy to me. Even though I tried to eat it with my meal, the taste just didn’t go well with savory dish. I’m planning to experiment making some kind of sweet treats with this coconut butter – chocolate coconut sundae anyone?

We had to drop off Hubby K’s little niece at the airport that night, so we decided to have dinner at my in-law’s place. This time I was fully prepared so I brought some dishes to share as well: A whole rotisserie chicken seasoned with Homemade Taco Seasonings, roasted bell peppers, and a container of homemade guacamole.

This strategy worked perfectly for me! I didn’t have to feel awkward for not showing up at their place plus I got to share some of the dishes with others, which most people didn’t touch either (YAY! More for me!) The only food that I had over there was the veggie soup that my in-laws cooked because I’d say it was the less harmless compared to others. Like a typical Cantonese soup, the soup was made by simmering pork bones for at least 1-2 hour. Truth to be told, I was actually tempted to try this Chinese Roasted Duck but in the end I didn’t touch it at all.

Today I had such a GREAT morning workout and I totally killed my old PRs and did everything ALL in proper forms! It’s been a year since I’ve been bodyrocking and I’m so glad I’ve made progress in my strength, appearance and endurance!

Such a nice hard workout surely deserved a nice post workout breakfast as well! An omelet with left over elk burger with half baked sweet potato! Plus lots of loose leaf tea which is not pictured here.

I kept my lunch super simple by cooking the rest of the marinated steaks, roasted some broccoli, topped everything with Homemade Tomato Sauce and sliced avocado for the fat.

After yesterday’s incident, I think I’ll stick with avocado as my favorite fat for my savory dishes. Sorry coconut butter/cream, you just didn’t make the cut for me…..YET! I love avocados even though the one that I cut this time wasn’t totally ripen yet so it was a bit chewy. Heck don’t care, I still devoured them! 😀

We went out for a bit and came back to munch of these super SWEET seedless grapes that I got from Farmer’s Market on the weekend. These grapes were REALLY SWEET to me, just like candies! I even had to drink some water in the end to wash off the sweetness in my mouth. Wow, my taste buds start to get more sensitive to sweet taste even from fruits, huh?

One wonderful thing when you’ve made enough food during lunch, you didn’t have to cook anything for dinner anymore. The only unlucky thing was, this was another half-ripen avocado. Ugh, two in a row for one day?

Do you always eat breakfast regardless you are hungry or not?
Have you tried Coconut Butter/Coconut Cream before?
