Ingredients:
2 lbs boneless skinless chicken meat (I used chicken thighs)
1 heaping tsp smoked paprika powder
1/2 tsp chili powder (or more if you like it spicy)
1 tsp garlic powder
Zest of 1 lemon
Juice of 1 lemon
Salt and pepper

Directions:
1. Trim off excess fat from the chicken meat. Mix salt and pepper in one small container and apply liberally over the chicken meat
2. Mix the lemon zest, smoked paprika powder, garlic powder and chili powder- rub it evenly on the chicken meat.
3. Place everything in a gallon size zip lock bag then pour in the lemon juice – let marinate for about 1 hour or overnight

4. Heat the skillet with 2 Tbsp coconut oil in medium heat – pan fry the chicken (about 4 minutes each side)

5. Pour the excess marinate on the pan and cook until it caramelized. Top on the cooked chicken
