Whole30: Day 10 There’s No Limit
Woot, without realizing I’m already 1/3 of my Whole30 challenge! Time flies huh? Actually I don’t really feel it that way or I should say I try not to think too much about it. Let’s face it, if I’m always just looking forward for the challenge to be over, then I’m missing the entire point of “educating” my brain to make a good food choice.
So what did I have for breakfast today? I took a total day off from working out (no workout challenge either and unfortunately I didn’t do any housework but I did cook at least 3 dishes! If you missed them, I posted here, here and here!)
Breakfast was simple: fried egg seasoned with homemade Fox Point Seasonings with leftover favorite roasted veggies 😛
I’ll be honest, I actually had another entire plate of Roasted Curried Cauliflower after the pic. Yup those things are so addictive and delicious!
Then I was off in the kitchen cooking Southeast Asian Chicken Satay and Satay Sauce, which became my super hearty lunch plate! This plate kept me super full even until dinner time.
I had so much leftover ingredients from the satay and the sauce so I gathered whatever ingredients in my fridge and made Lemon Grass Tomato Beef Stew, which would be my dinner. I wasn’t that hungry, but I know I had to eat something!
Added some sauerkraut to provoke my appetite, which actually kinda worked! Sour/tangy taste always stimulates my appetite 😀
Hubby K and I split this bowl of berries and cut up yellow nectarine as our evening dessert.
Whole30: Day 10 – There’s no limit on how you can use your ingredients. Similar herb paste can be used to make another dish which can save you TONS of preparation. How cool is that? 😀
