Hey everyone!

For those in the US, how was your Thanksgiving day and Black Friday? Ours were pretty quiet and in fact we both had to work the day after the T-Day, which was a little bummer. At least I had a choice to work from home and it was only half day.

We didn’t like crowds so much so no Black Friday shopping either. We enjoyed our quiet T-Day and Black Friday.

Anyway, it’s Pumpkin season now!! I am not quite experience cooking with pumpkin but I couldn’t hold myself not to experiment with them. Since I am one lazy ass person, I rather bought canned pumpkin so I don’t have to cook/roast, carve and mash them myself. I like simplicity and practical.

Here’s a little snapshot what kind of pumpkin kitchen experiments I’ve been doing.

One of the recipe wasn’t created by me was the Pumpkin Pancakes. I adapted Diane’s Balance Bites recipe and halved it. And since I’m still on my Carb Nite Solution, I made 3 servings (3 medium pancakes) from half of her recipe and only ate 2 of them along with my other protein and fat breakfast today.

We didn’t have any turkey on T-Day so to make it up, we had a roasted chicken on Friday instead! πŸ™‚
