A Fulfilling Sunday
Happy Sunday everyone! Phooey, it was 90°F here this afternoon..summer in March?! This is the time when the weather is neither winter nor spring. It had been pretty cold for the past few days and today was the warmest ever and tomorrow it’ll cool down to 70s again. Geez, stop playing around with us, mother nature?
Anyway I had a fulfilling Sunday because I actually got a LOT OF THINGS DONE!
I finally dragged myself to vacuum the house, mopped the floor, cooked a huge chunk of beef which hopefully would last us until Tuesday lunch, and cleaned my kitchen. Hubby K on the other hand also got some house work done.
I didn’t do any particular workout today because I was quite sore from ZWOW 7 (those side bends is pretty deceiving!) but in order to fulfill my March Challenge, I opted for a 30 minute walk under the morning sun. Gotta soak up more Vitamin D until my Fermented Cod Liver Oil/Butter Oil Blend and Vitamin D supplement order comes!
Weekend eats had been incredible!
Those mushrooms were expensive so I had to figure out a way to cook the stems. Nothing got wasted here!
I accidentally overcooked one of the sweet potato that it became super mushy. Since I’m not a big fan of eating mushy sweet potatoes, I quickly whipped up some eggs with some leftover cooked ground beef and cut up some remaining mint leaves and this was the result.
Yummy!
It feels nice and fulfilling when a lot of things got done.

90 degrees?? Here we are having 65 degrees today and I thought that was warm!
65 degrees considered to be cold for SoCal person like me 😛 But today our weather is around 60-70s…it fluctuates A LOT!
The weather was crazy last weekend! And I hear it’ll be similar tomorrow – go figure. 🙂
i love mushrooms too! that sweet potato beef mash up you have going on there looks incredible! can we trade weather for a day? i woke up to snow and 30F! brrrr i think it’s the last of winter though 🙂
