Enjoying the Weekend…Busted!
Hi friends/readers! How’s your weekend going so far?
I’d tell you that I’ve been enjoying this weekend as MUCH as possible before going back to work tomorrow some fiasco happened (more on that later)! It actually feels nice that I’ve got to have a weekend again (if you know what I mean) and looking forward going to work for next week.
Saturday
I totally took an entire day off from working out and just chilling. Besides my body was pretty sore from Friday workout, which felt super tough. And when I woke up, I was so STARVING that I really couldn’t wait to devour this entire plate of breakfast: left over roasted broccoli, fried eggs and a slice of Applegate Uncured Black Forest Ham.
Remember the big ass avocado I got a while back?
I made guacamole for lunch by mashing half of it and mixed it with some lemon juice, salt and pepper. My impression? MEH. It wasn’t as “buttery” as the small Hass avocados that I usually got and it tasted pretty bland. The small Hass avocado still has some hint of sweetness which usually enhanced by adding some lemon juice and a bit of salt. Not this one. Sorry Florida avocado, you’re just not my favorite. 🙁
However, the minced beef and the Roasted Curried Cauliflower made it up though!
After lunch, I cooked a whole beef rump roast in a pressure cooker to make some kind of beef “carnitas”. It was ok, but the beef was a tad dry if I didn’t add the sauce over it. Still yummy though.
I wasn’t super hungry for dinner so I just had a small bowl of protein and fiber (but I did had another bowl full of roasted broccoli later on)
Sunday (Today)
I wanted to do some strength training style workout so I did one of Mark’s Daily Apple’s WOW: Slowdown plus I added some extras on my own.
It’s Sunday so it’s time for me to re-stock the essentials, such as:
Hard boiled eggs
Cooked yams/sweet potatoes (in a pressure cooker – 15 minutes and DONE!)
I’ve been craving for sweet potato fries so I made a batch of Oven Roasted Sweet Potato Fries (seasoned with Pumpkin Pie Spice and coconut oil, roasted in 400°F for about 25 minutes.)
Yes, I munched on these cracks for almost entire time!
Ok, in the middle of making these, my oven suddenly busted! The upper heat suddenly stopped working thus when I roasted the third batch of sweet potatoes, the oven wasn’t hot and the fries weren’t cooked! I had to resort to pan frying the rest of them.
The lower heat still works but what’s the point? I can’t bake anything if only the lower heat works plus I won’t be able to roast anything since broil function is pretty much busted already. I can’t believe it BROKE and we just got it couple months ago! Our last counter top convection oven at least lasted for about 2 years. I’m so disappointed at you, GE! GEEZ. Anyway, since it’s still under warranty, let’s see if we can get it replaced but the bummer part is I don’t think we have the receipt anymore. ARGH!
Anyway lunch was comforting enough though.
What’s for dinner? Left overs from yesterday (that shredded beef and some veggies)!
How long do you usually keep your receipts?
I usually keep regular receipts (grocery, bills etc) for at least 1 month and for big purchases, I usually keep it for at least 3 months, but now I better keep it as long as it’s still under warranty.

Sorry about your oven!!
I keep receipts for things like clothes and appliances for 3-6 months. Everything else I usually get rid of the minute I get home from buying it! I can’t stand clutter!
I can’t stand clutter either but from now on at least for small appliances I’ll try to keep the receipt for 3 months…*sigh*
i can’t believe your oven broke! i never keep receipts unless they are big ticket items with a warranty. i never keep our grocery receipts but i can see the bill total in online banking. dinner was a hodge podge of veggies + eggs tonight since we had a nice brunch at a place called ‘meat & potatoes’ with a couple friends this afternoon. 🙂
