Eats of the Day and Made My First Paleo Bars
My Monday morning workout wasn’t too bad…perfect to kick off this week.
Post workout/breakfast:
Whatever left overs I had: shredded baked chicken breasts, roasted carrots, 1/2 baked japanese yam, cherry tomatoes
I was so low in protein, so I fried up some eggs and zucchini along with some steamed veggies for lunch.
After drooling over Civilized Caveman Cooking Creation’s Caveman Crunch Bars recipe, I decided to whip up a batch as well. I modified his recipe based on whatever I had in my pantry. (will post recipe sometime later)
Dinner was super simple, some steamed veggies, cherry tomatoes, avocado and unpictured 1 can of Wild Planet Skipjack Light Tuna.
Have you failed making your own almond butter?
I confessed, today my homemade almond butter was a big failure. No matter how long I blend the almonds in my food processor, it just didn’t want to turn into nut butter. Basically it was stuck as almond flour/meal. Did I do something wrong?

yep i’ve done that. honestly almond butter takes a while! if they are raw then you have to add a smidge of oil (i added olive) but the trick is to roast the almonds first which helps them release their oils faster! just keep processing them, it takes a good 8-10mins!
Did you soak your raw almonds prior roasting it to reduce its anti-nutrients or whatsoever? Perhaps I should elaborate more…I soaked these almonds for a while then I roasted them to dry it out then blend in my food processor. I guess the soaking also has something to do with the almonds not releasing their oils??
