Egg and Avocado Dip

I was inspired to make this combo after I saw it on Lindsey’s post at Enjoying Healthy Foods. Super easy, full of healthy fat and protein! Great by itself or as a dipping, although I don’t know what are you going to dip with since crackers and chips are out. Well, just eat it like that cause trust me, it tastes that GOOD!

2 small ripe avocados – peeled and pitted
Juice from 1 lemon (you can use 1/2 if you don’t like sour- I do)
Pinch of salt
Pinch of black pepper
2 hard boiled egg – chopped

1. Mash the avocados with a fork – pour in the lemon juice
2. Add the salt and pepper – stir until everything combined
3. Add in the chopped eggs and you’re DONE!

If you’re not going to consume it right away, cover the egg and avocado dip with plastic wrap and make sure no air in between to slow down the oxidation. Unless you’re packing for your snack, I don’t think you can wait that long not to dig in into this yummy snack! So what are you waiting for? Go and make yourself some already 😀

    That’s what I wanted to ask you, I never ate avocados before, now I LOVE them, but when you say ripe, you mean soft, not hard, right? I dunno which state is considered ripe (but I personally prefer them softer..) Thanks! 🙂
