Folks at Rudi’s Organic Bakery were kind enough to send me their Gluten Free bread samples!
I got three flavors: Original, Cinnamon Raisin and Multigrain

The best part is their ingredients are pronounceable and there’s NO nasty HFCS (high fructose corn syrup) and other chemicals. Although it’s technically not Paleo friendly, but it’s good for a little splurge once in a blue moon. I sampled one slice (regular flavor) and it was good (note: Paleo hard cores please don’t judge) ! The texture might be a bit drier than your typical gluten laden bread, but it was still yummy. Hubby K could attest to this..he already had at least 4 slices for his breakfast, topped with mashed avocado. πŸ˜€

He hasn’t tried the others yet, but for sure the Cinnamon Raisin one would be a hit. Even without opening it, I could smell the strong cinnamon scent from it. Very mouthwatering πŸ˜€

My beloved blogger friend, Kath at My Funny Little Life sent me this little gift. She even drew the signature Kath smiley face on the card and on the envelope as well. How cute!

The package is her favorite organic spice brand that has similar blending style as curry. Kath knows how much I love curry and it was very thoughtful of her to send me this. I can’t wait to use this spice to experiment with! I was a bit worry for the international shipping costs but after she assured me it was ok, I felt a bit relief. Thank you so much Kath for this gift!

Another package was my 1 Gallon Coconut Secret’s Coconut Aminos order from The Raw Food World!

It came just in time when my Coconut Aminos supply was getting low. Another good thing is, buying a gallon size Coconut Aminos is WAY CHEAPER (even after shipping!) than buying the 8oz bottle one. So far The Raw Food World is the only place that carries 1 Gallon Coconut Secrets’s Coconut Aminos. Now I don’t have to worry for running out of Coconut Aminos.

You might wonder what does Coconut Aminos taste like? It’s kinda hard to really describe it but I’ll try my best. It’s less saltier than typical soy sauce and has a bit of sweetness to it, similar to soy sauce. And to me, it has a bit of that “alcohol/fermented” taste but it won’t impact your dish at all. Overall, it’s a perfect substitution for soy sauce (for those who want to avoid soy completely).

Now you know what I got today in mail so wanna know what I eat today as well? πŸ˜›
Pre workout snacka small piece of purple yam (can’t get enough of this!)

Then we went off to do some light grocery shopping cause I realized this coming weekend is Father’s Day and I think it’s just appropriate for me to show up at my in-law’s place for a family dinner on Friday night. I’m planning to make Baked Taco Chicken Legs (similar with this Crispy Taco Chicken recipe) and since chicken legs are on sale at Superking Market (today was the last day!) – 0.79cents/lbs! Of course I had to throw away the skins since this is non organic ones, even though they’re halal.

Late morning workout was awesome. Btw, forgot to mention, I finally could do unassisted ONE LEG SQUAT! Super happy about it!

Post workout snack
Baked Taco Chicken Leg and more sweet potatoes

Late lunch
Caramelized Shallots Baked Chicken Legs (same recipe as Roasted Chicken Legs with Caramelized Shallots) accompanied with steamed veggies, pan fried zucchini slices, 1/2 avocado topped with Balsamic Vinegar reduction sauce and Homemade Tomato Sauce – NOM!

Berries as afternoon snack and waaay too much banana chips now that I’m feeling sick and can’t have appetite for dinner πŸ™
But most likely, dinner would be a smaller portion of what I had for lunch today.

Have a great day!
