Hey everyone, aren’t you glad that it’s almost weekend (not that it makes any difference for me – pun intended) but most important thing, what plans do you have  for this Father’s Day weekend?

I will go to my in-law’s place to have a family dinner and also will bring some of Taco style Baked Chicken Legs (same recipe and technique with Crispy Taco Chicken recipe)

Today I mostly sat on my stability ball (man I want that standing desk now), working in front of my computer putting together my work samples. It starts to come along and I am aiming to start coding it tomorrow and hopefully it’ll go live sometime next week and then I will have to start a real job hunting – fingers crossed. When you’re putting together a website (even a simplest one) there’ll always be some technical glitches, cross browser issues etc etc – ok I’ll stop now as I start hearing someone falling asleep already.

Ok what did I eat today?

For starter, I did 100 burpee in 10 minutes challenge from Bodyrock.tv (I was close to 100!) and trust me that was the ONLY workout I ever did today. In addition to that, I also start practicing my unassisted one leg squats whenever I have a chance. My buns surely hurt now.

Breakfast/post workout meal
3 over easy fried egg sprinkled with TJ 21 seasoning salute with splash of Red Boat fish sauce, pan fried sliced zucchini and 2 slices sweet potatoes.

For lunch I baked some chicken legs, seasoned with the spice mixture that I got from Kath yesterday, salt, pepper and turned out super yummy! I’ll definitely experiment more with this spice mixture.

Today I was so glad I didn’t snack at all for the entire afternoon cause the lunch kept me full until dinner time. Thank goodness that I didn’t munch mindlessly on banana chips unlike yesterday. They tasted good when they were eaten but afterward, I felt super bloated and didn’t have appetite to eat at all (totally skipped dinner yesterday). I think I’m going to tell myself not to buy anymore banana chips. Might as well I make it myself with fresh plantain like last time.

Dinner was super simple: left over beef stew that I froze last week, Roasted Curried Cauliflower (can’t ever get tired of these) and an avocado drizzled with balsamic vinegar and some steamed veggies.

Washed it down with some berries and cherries.

Ok I think I gotta get off from staring my monitor so I’m going to call it a night.

Can’t wait to start bodyrocking tomorrow with this newly arrived dip station 😀
