Hodge-Podge Procrastinator
TGIF!!! Finally the day has come! Anyone has plans this coming weekend?
I will have my annual eye exam tomorrow morning so I can get a new prescription to order my contact lens. My eyes have been pretty stable for the past 3-4 years! So happy with it, despite how many hours I spend in front of computer due to the nature of my job (not to mention at home too!) Hopefully tomorrow’s test result is good!
Btw how did you like my scheduled post? I know it was quite long so I didn’t want to post it right away after that past due date yogurt post.
And I totally agree with you about with the expiration date on food. In some ways they’re just guideline. As long as it hasn’t spoiled then it’s safe to consume (I only talk about whole foods, not the processed ones). In fact, I’m still fine here after consumed that yogurt..hehe.
This morning after my workout, I scrambled around to make Gluten Free Pancake – hodgepodge style.
Hodgepodge Gluten Free Pancake (measurements are approximate except the eggs)
Ingredients:
2 small eggs
About 1 cup almond flour/meal (I used left over ground almond and almond waste from my homemade almond milk)
Splash of Blue Diamond Unsweetened Almond Milk
About 1 Tbsp ground flaxseed meal
A dash of salt
The key here is the batter shouldn’t be too runny- it should be thick but not too thick.
Directions:
1. Beat the eggs add in the almond flour, almond meal, flaxseed, milk and salt
2. Heat up the non stick skillet to medium high
3. Melt 1/2 Tbsp butter or oil
4. Pour in the batter (size is up to you – make smaller dollop for small pancake etc)
5. When you saw the batter looks more settled flip it and cook for another minute
Serve!
I loved my b-fast today! The pancake was super yummy and filling! Protein galore!
Speaking of procrastination, I’m kinda guilty in this area. I mentioned a while ago that I need to fix my car bumper after some unlucky incident in December. I‘ve been procrastinating to get another quote from another body shop, aside from the one that the insurance offered me.
Everyday on my way to work, I always pass by a body shop but they are not open until 8:00 am! I usually get to work around 8:00 am just for the parking sake (our workplace has a horrible parking situation long story short).
This morning I purposely left my house a bit later, hoping by the time I passed by the body shop, it’d be exactly 8:00 am. WRONG. It was still about 10 minutes until they were open. So what did I do?
Yup, I passed it and procrastinate….again! *sigh*

I am scared to get laser eye surgery. It’s my eyes we’re talking here. Anything goes wrong, I’ll be blind!! Maybe I’m paranoid, but I don’t want to mess around with my eyes.

For some reason I was having some sweet cravings so I cut up some banana, sprinkled with pumpkin pie spice and microwaved it for a minute. (inspired by Averie’s 1 minute banana snack – couldn’t find the exact link)
