Blog Facelift In Progress and Some Other Stuff

Happy Sunday everyone!

Just want to give a little quick update on my little space.

As you’ve noticed, I’ve changed this blog appearance from dark to light.


I’ve been thinking of changing the template because the old one didn’t have much flexibility and function that I’d like to have. Plus it starts to bore me..LOL.

Now I could finally re-organize my recipe index so it’s easier to navigate.

And of course since this is still a work in progress, there might be some hiccups here and there. Plus it might take me sometime to re-categorized my old posts. Not to mention I am still tinkering around with this new template.

Anyway, hubby hasn’t been feeling well since last Thursday. Not sure what strike him but his mouth, especially histongue and throat have been feeling swollen. He hasn’t been eating any solid food, including meat because it’s too painful for him to chew anything. For veggies, he’s been eating puree cooked squash and tomatoes with some whey protein powder so he could still get his protein in.

I felt a little guilty for being able enjoying this grilled to crisp mackerel pike. I had 2 of those!

Words Can’t Justify It

Hey, I apologize for the lack of updating the blog recently. I have no other excuse other than being slacking off and lack of time commitment. Well hopefully I still maintain at least one reader, right?? LOL

Anyway there were things been going on for me and one of it was I finally joined a gym!

Yup you read it right, I joined a gym.

So what happened to home workout? Well I still do it if I don’t have time going to gym or if it’s a recovery day. The reason I joined a gym is because I want to take my training to the next level. I am planning to do more weight training so I could reach my fitness goal: to improve my raw strength!

It took me a while to realize that there’s a gym nearby my workplace and my workplace offers membership discount without any commitment! Before the offer expires this month, I decided to sign up. My workout schedule remains the same. I still get up at 3:40am and I just need to catch the first train to work and do my workout before I walk to the office.

In order to achieve this goal, I’ve also put together my own workout program that I will be doing for the next 4-6 weeks. Still tweaking it around but the main idea is already there. Pretty much I’ll be focusing on basic moves.

So far so good.

I am still doing my Carb Nite Solution and I think it’s been around 3 months now. I might not lose tons of weight but I could see my body composition has changed.

Some other updates:
I finally got a new pair of glasses frame 🙂

Yesterday I went to my friend’s daughter’s 1st birthday party.

I perfectly knew there would be hardly anything I could eat besides the salad and the hardboiled eggs. Luckily I had some pumpkin leftover and I made this Crustless Pumpkin Pie (recipe here)

It was my first attempt and I was crossing my fingers how it turned out! I took 2 slices and it tasted pretty good to me. Luckily my friend’s mom told me she LOVED it and even hid the rest of the pie.

Today I tried out this Chinese Crispy Pork Belly recipe aka Siu Yuk and it turned out not bad at all!

I’ve seen people making this egg cup with deli meats so today I decided to make some for my weekday in between snacks. I realize I totally lacking of protein and fat snack to tide me over until my next meal. These should be good.

I apologize for the lack of updates on my blog lately..blame it to my LOST weekend marathon. It seems like I won’t return to reality until I actually finish the entire season.

Anyway my eats have been pretty good. Here are some of them:

I also experimented making Roasted Cauliflower in Cocoa Powder and Smoked Paprika, thanks to Mel’s recipe.

Truth to be told, I’ve been addicted to roasted pistachios. Once I had one bite, I had hard time stopping myself.

I love pistachios..but I kept mindful portion..promise!

Workout wise, I’ve been only doing 50 Burpees during weekday after I come back from work and did full workouts on Friday-Sunday.

This morning I actually planned to get up at 4:30am to get back on my morning workout routine again. Unfortunately, my alarm didn’t go off and I’m just lucky enough that I got up exactly at 5:30am or else I’ll miss the train. But seems like luck wasn’t quite on my side as the train actually got delayed and I got to work a bit later than usual.

I wonder if today was a holiday as the train and bus weren’t as crowded as they usually are.

Do you have plans for Valentine’s Day tomorrow? Or do you celebrate Valentine’s Day at all?

Hubby K and I never celebrate V Day, not even when we were still dating. Yeah we’re lame like that..ha!

Random Stuff Lately

Hello bloggie world!! Long time no talk, I apologize for the lack of updates lately here. However, I’ve been pretty active on Delightful Taste Buds Facebook page so if you want to read my random nonsense posts on my food, rambling etc, feel free to “Like It” 🙂

Ok enough self promo here. How’s everyone doing??!!

As for me, I’ve been listening a lot of podcasts from Sean Croxton from the Underground Wellness.
Some of my favorites are:

You could also search it on iTunes, download it and listen to it while you’re on your way to work. I usually listen to some podcast to kill some time while on the train or bus.

Also I finally find a good spot to have my lunch at work! Instead being cooped up in the office and eat in at my computer desk which I hate, I usually sit at the outdoor seating area to have my lunch! What’s better than getting fresh air and some Vitamin D while enjoying good food, right?

The only bummer thing is if there are some smokers around…geez but I’ll try my best not to inhale those smokes! Being a second hand smoker is bad, you know!

And I experimented with brining poultry (either turkey or chicken) before cooking them and it turned out SUPER YUMMY!

By soaking the poultry meat in salted water plus spices (which was cooked and cooled down before you dunk the raw poultry meat) made the meat very tasty, juicy and tender when you baked them. LOVE this technique! I should’ve done this long time ago. Dry rubs are fine but with brining, it takes it to the next level!

Our Southern California weather has been freezing lately in the morning so by the time I got to work, I wanted to have a warm drink so I made this Chocolate Vanilla Coconut Milk (no sugar/sweetener added) = HEAVEN!

If you ask what’s the recipe, it’s not much of a recipe. Basically I mixed coconut butter with some cocoa powder, powdered vanilla extract and some hot water. The more coconut butter you have, the creamier the milk is. I didn’t add any sweetener (not even honey) since the coconut butter already provided enough sweetness to it, but feel free to do so.

The drink actually kept me full for the entire morning so I even ditched my Tuna Sandwich with Almond “Bread” that I brought today for breakfast. Well I guess it’ll be for my tomorrow’s breakfast instead 😀

I recently purchased some other healthy cooking fat to add a bit more variety to my pantry.

First of all, Whole9 & Whole30 Approved Pure Indian Foods 100% Organic Grass-Fed Ghee, which I got from

Yeah I’ve made my own ghee before and truthfully it’s not difficult at all, but sometimes I just want an easy way out. This ghee particularly smells and taste the exact same one as the homemade one.

Next was Red Palm Oil, which I also got from

Seriously, after I heard the good stuff about Red Palm Oil from the podcast, I’ve been itching to try it, especially to fry eggs. Gosh, I can’t wait until Friday to try it!!

Last but not least, I’m super excited to have my lunch tomorrow!! 😀

Totally unrelated: This morning when I was on the bus on my way to work, a guy just talking to me that he’s seen me taking the same bus as he does everyday. Should I take him as a stalker or just as a friendly gesture? I admit I do recognize people who riding the same train and subway with me but not buses as usually I’m always being sandwiched between tons of people. Yeah the bus that I take is THAT FULL during morning rush hour.

Random foods

Not quite a good title but I don’t really know what to put. Anyway today is my day off from workout so I tried to keep my food light, but don’t think it turned out that way. Just take a look. In the morning before went to work, I had plain soymilk with 1 scoop of Chocolate Protein Powder because I was too starving and couldn’t wait until I got to the office to have breakfast.

The papaya I got on Saturday finally ripen so I cut that and brought some to work.

After I got to the office I had my second breakfast, cottage cheese with Kashi® GoLean® Crunch Almond Honey Flax Cereal.

Gosh I love Kashi cereal, but it’s a bit pricier compare to the other brands. But who cares? They are healthier than those sugary cereals. I never really like Kellog’s Corn Flakes and any other colorful fruity cereals. They’re waaaaaaaaaay too sweet to me.
I brought my last 2 whole wheat bread slices, but only ate 1 slice topped with PB. Those hold me up until lunch time.

Pretty much my lunch was whatever I had from last night, the mixed veggies with lentils plus 1 whole wheat pita bread.

When I got home, I got super duper hungry. My husband told me to have whatever we had in the fridge first, no need to cook anything. He also had his dinner a bit later because he wanted to do P90X Yoga first. So my dinner was left over from last night and the night before.

After dinner I still felt I wasn’t filled up yet, so I finished this non fat plain yogurt, topped with papaya.

The papaya was ok actually. Despite its ripeness look, it wasn’t as sweet as I expected. It was more on the bland side. A little disappointed but I still finished it.

Omg, tomorrow is already Friday! This week went by so fast! Probably because I got busier at work now.
