PaleoFX13: Day 1 – Austin, Texas
I went to bed quite *late* Wednesday night based on current time (midnight) / LA time (10pm) and couldn’t fall asleep for who knows how long. Before I knew it my eyes flung open right before 6 am local time! I tried to get more shut eye but failed so I finally woke up and made myself a good cup of hot tea.
I just realized I might not bring enough tea bags to get my morning tea fix…UGH!
If you think these are enough, you don’t know me well. I usually put 2 tea bags per cup and I could easily drink at least 10 cups of tea through the entire morning. It’s a different story with loose leaf tea since it’s more concentrated than tea bags.
Anyway I just found out today that the event doesn’t cater lunch this year. Ugh..okay, I didn’t expect that at all but I am glad I actually might buy enough groceries last night and I might need a little more.
The conference won’t start until noon and the door won’t be open until 10am, so I had a little time to explore Austin a little more. This time I took a local bus to stop by Texas local grocery store, H-E-B.
I wasn’t sure if I wanted to buy more protein so I ended up getting this green cauliflower! It ain’t cheap either ($3.50 for one head!)
After I got back to my room and took a quick shower, I whipped out a quick breakfast. I seriously lacking my veggies yesterday so I loaded up this time. Felt tons better after having a full meal!
Yesterday I might overdid it with string cheese and mac nuts even I had to adjust my belt hole back to where it used to be. Ugh! Gotta lay off the cheese and mac nuts for the next 48 hour a while (*I confessed I had another string cheese at night*)!
Then I whipped up my next batch for lunch to pack – this time 2 beef slider style seasoned with curry powder and topped on spring mix salad. I need to wait the sliders to cool down so I could pack them in my little plastic container. Bummer I totally forgot to bring my glass container, but oh well.
Then it was time to hit the convention center! The presentation didn’t start until noon so after I checked in and got my goodie bag, I took my time to stroll around the exhibition hall to check out the vendors.
Today’s presentations were only held on one room so no conflicting schedule. I attended 3 presentations total –
Nora Gedgaudas started the first presentation: Adrenal Myth which I only attended for a little bit prior the next presentation by Dr. Cate Shanahan: Carbo-Loading = Load of Crap?
Listening to her presentation just reaffirm me about this Carb Nite thing just how we do not need a lot of carbs in our diet if we want our body to stay as a fat burner.
The next presentation was Dr. Lauren Noel about Customizing Paleo Diet to Aid Ultimate Healing. She explained what kind of tests that we should get to optimize our health. Just some stuff that I caught in my notes: AST/ALT, creatinine, genetic testing (Apo genotype), anti TPO & anti TBG, micronutrient testing (in order to know if our body could absorb nutrient properly).
I got hungry in the middle of the presentation so I walked outside and ate my little lunch/snack.
Apparently my little snack wasn’t quite enough as I felt hungry again so I walked back to my room and whipped up a quick meal – ground beef, scrambled egg and saute green cauliflower. Just beware that this will be most likely my meal unless I eat out.
Then I walked back to the convention center to attend the last presentation of the day by Robb Wolf aka Paleo Baby Jesus per Michelle aka Nom Nom Paleo (it’s an *AWESOMELY funny and cool nickname btw!*)
Afterward I took some walk around the convention center. Austin’s weather has been pretty gloomy for the past 2 days!
No dinner for me that night except for another string cheese, left over prosciutto and the remaining spring mix salad….! Overall today was an okay day..nothing too exciting but on the brighter side I didn’t have to hop from one room to another to catch the presentation.

I’m just curious, I read an old blog where u were doing the CNS. How did that go for you? I’m looking to hear from people that have done it and what kind of success they had.
