Long time I’ve been MIA and all sudden I am already in Austin, Texas to attend PaleoFX13!

The first time I went to this type of event was 2 years ago when AHS11 was held in Los Angeles, CA.

This time I was travelling solo since the cost was a bit too much for having both hubby and I to go. Even I didn’t plan to stay until Sunday since this weekend is Easter Sunday and the flight ticket is way more expensive to come back on Sunday morning.

Other than stocking up the usual (clothing, toiletries), I also packed some of my favorite spices (curry, homemade taco seasonings, salt, pepper) and coconut oil since the hotel I’m staying will have a small kitchen and fridge!

I also packed my cut up kabocha squash and 1/3 cup raw white rice and bunch of chestnut package so I could have my Carb Nite on Friday.

Anyway my flight to Austin from Long Beach was a breeze although the boarding was a bit slow. The best thing was my big coconut oil jar was safe from being confiscate by TSA!

Then I met up with 2 girls who are also staying at the same hotel as I do to share Super Shuttle cab.

Checked into my hotel. The room was decent with some small kitchen area so I know I need to hit up a grocery store to stock up the essentials!

I checked on the cooking utensils that they provided, and look at this!

Good thing the front desk had extra spare or else what am I gonna do with my congee for Friday night Carb Nite???

The night prior my departure to Austin, I joined The Austin Primal Living Group for a little dinner together at Wholly Cow Grass-Fed Burger.

The place was about 1.2 miles from where I stayed so I got a nice walk prior dinner and got a chance to take some pictures.

It was nice to meet and talked to like-minded peeps regarding paleo/primal. Majority of the people on the table ordered the Paleo style burger, The Fit Cross burger – basically beef patty sandwiched between 2 portobello mushroom caps with onions, tomatoes, mustard and pickled.

I opted mine without onions and mustard to be on the Ultra Low Carb.

Uh..I did splash it a bit with some Tapatio sauce.

The burger was great but I think it was a bit too small or maybe because I was quite starving since I didn’t have proper lunch.

After hanging out a bit, I had to say good-bye and hit up Whole Foods to stock up my pantry! It wasn’t too far from the burger place but it was at least 1.2 miles on the way back to the hotel.

I felt a bit lonely walking by myself but I didn’t feel threaten or anything since once in a while I saw either a runner or a biker passed by. One tip the local people told me was not to check a map on my phone while I was on the street. It’s better to check the route prior going outside the street so I won’t too stand out as a tourist. Gotta pretend I am a local Austin 😀

Here’s my Whole Foods haul! This should be good for the next 3 days!

It’s almost midnight here in Austin, but I think my body’s biological clock is still LA’s time, which is 10pm! Man, I’m hungry..gonnaa snack a handful of macadamia nuts then hit the bed!

Tomorrow will be the first day of the conference!
