Some Eats, Some Failures, Some Succeed
Happy Sunday everyone! I can’t believe the weekend whooshed by SO FAST and tomorrow is back to work again *Insert BIG sigh here*
My eats have been divine. Here’s a little snapshot. I had to admit I had a wee bit of snacking lately, especially between breakfast and lunch. Good thing I stocked up quite a bit on Primal Pacs 😀 It’s one of my most versatile snack and it’s quite a keeper. But since I don’t trust myself for not overconsuming, I stick to the gun and only ordering the small size, although I won’t deny I had some temptations to order the bigger ones.
I also tried for the first time to drink that Coco Cardio (as shown in the pic). Basically it was unsweetened cocoa powder mixed with beet powder. My verdict? I think I’ll stick with my regular green tea bags.
Other things that I’ve tried and failed was to make these sweet potato fries. No matter how hard I tried, they either fully cooked but soggy or crispy but burned!
I gave up on thinking I could create crispy sweet potato fries just like restaurants did. No matter how hard I try, there’s no way to get them that crispy if I don’t deep frying them. Bleh!
But another experiment turned out successful, just like this Thai-style omelette (Khai Jeow)
The most important part here is not the recipe but the technique! Just watch this video:
You could see the original recipe here, just make sure not to use vegetable oil for frying it. Either use coconut oil or lard as we all know saturated fat is the most ideal oil for high heat cooking like this. And also the fish sauce is the key ingredient here as well and Sriracha chili sauce if you are a fan. I am but I don’t have it in my pantry and I don’t think it’s worth the drive to a market for a mere chili sauce. Besides after the workout, all I wanted was to EAT!
For dinner, I already marinated another batch of lamb ribs to make Grilled Orange Dijon Marinate Lamb Ribs. It was a big hit last time so I doubled the recipe this time.
I am super excited when Coconut Secrets sent their Coconut Bar Samples to review.
I’m already a big fan of their Coconut Aminos so I can’t wait to try these bars and review them here!
Have a wonderful rest of your weekend!
