As any Sunday when I already planned to do meal preparation for the week, I usually got up quite early (today was 6:30am). As I just finished my March Challenge yesterday and technically only had 2 full rest days during the month, I decided to cut myself a slack today.

I started off my morning by making a brown omelet with chopped leeks.

Served with zucchini tagliatelle sprinkled with Aleppo Chili Pepper. No the omelet didn’t get burned.

I also sipped a warm bowl of meaty beef shank broth topped with chopped leeks.

Then I got busy making Orange Barbecue Shredded Beef in pressure cooker.

I hesitated sharing this recipe since it turned out a bit disaster because of my lack of judgement, but in the end I still salvaged it so it’s still worth for sharing, right?

Now I wonder if my other experiment would turn out disaster as well but I won’t find out until tomorrow or a day after. I made enough food that hopefully would last us until Tuesday at least. If you’re curious, here’s a sneak peek of my next recipe experiment.

But I am super happy that the Merguez Meatballs turned out extremely yummy!

I love Mel’s recipes because she usually uses a lot of different spices and it gives me an opportunity to experiment with different spices.

I was munching and snacking between cooking so I didn’t eat my actual lunch meal until late afternoon.

My plate is lacking green color but fear not, I also roasted a tray of broccoli but forgot to take a picture but I think you got the idea.

Then I had to spend sometime to scrub the bottom part of my pressure cooker. It charred really badly from cooking tomato paste and honey for a good 1.5 hour. Hopefully by boiling some vinegar in there would ease out the scrubbing process a bit. Fingers crossed.

What’s for dinner? Hm..not even sure I’d have one. I skipped dinner last night and might do so tonight. Maybe just a little bit of berries.
