Paleo Eats of the Week
Hi everyone!!
I apologize for my absent from this blog lately. After my Atlanta trip, everything just went downhill since I had to go to work the next day and as you know, I don’t usually have that much time updating blog after I got back from work. But since today is Thursday which is sort of my Friday, I finally could sit down and blog a bit.
Btw, I will post about my Atlanta trip Paleo(ish) eats soon. I already got the pictures ready but the draft is in my laptop, which I kept forgetting to copy it to my desktop computer. Plus I’ll soon post about my Paleo food budget sometime this weekend (fingers crossed).
Anyway, let me say this: as soon as I came back from Atlanta on Monday, I was craving for healthy food, VERY BADLY! After whacked sleeping and eating pattern and NOT working out AT ALL, I was super tired by the time I got back home around noon. Not much food in the fridge but I always had hard boiled eggs and cooked sweet potatoes ready so lunch was great and VERY COLORFUL.
Then I made dinner for the day
I was seriously lacking veggies in my meals during the trip so I maxed out the veggies as much as possible.
After not working out for 3 days, it was challenging enough for me to get back on track. So far I only squeezed in 2 days of short workouts.
And the rest of this week eats so far weren’t too much different from what you’ve seen. It’s kinda hard to vary the dishes when I am not in charge of cooking. Just be grateful enough Hubby K cooked all the food (except the one in the first picture) 🙂
Yesterday I went to Trader Joe’s with my co-worker and I knew I shouldn’t buy this bad boy because I couldn’t stop munching them!!
If you’re a Paleo police, I’ll say it upfront: yes cashews are not optimal source of food because they are belong to legume family and I am well aware of that. But in a pinch, nuts are still better snack choice than donuts, crackers and any other processed craps.
