Hey beautiful/handsome people!

Sorry for the lack of activity here lately but I could assure you my eats have been pretty good though not exactly 100% perfect paleo. Besides we gotta live a little, right?

I won’t bore you with the exact details. Instead I just gave you some highlights of what I’ve been doing for the last free days before I start going back to work tomorrow.

Friday we were out for the whole day driving from one place to another. It was for Hubby K’s 2 interviews which was happened on the same day at 2 different places. Since he had been nice enough to drive me around when I had interviews it was fair enough for me to drive him as well right so he could concentrate practicing while sitting in the car. Since I knew I had short time in the morning for a workout, I just did super quick workout and quickly snacked on post WO meal before hitting the shower and drove us off to downtown Pasadena for his first interview.

Roasted Curried Cauliflower, 2 slices Applegate Uncured Ham and some kabocha

We stuck in the traffic for a good 30 minutes and were nervous enough that we might not make it on time. Luckily it cleared up and we able to reach our destination on time.

While waiting for him, I walked around to The Container Store which located within walking distance from the office. Can you tell that I am obsessed with containers? I admit, I LOVE containers – all kinds and shapes 😀

After the interview, we had lunch at Choza Mama, a Peruvian restaurant in Old town Pasadena.

Later on, BIL (brother-in-law) and his wife came and joined us as well since they work around in the area. Everyone shared this basket of bread with these three dipping sauces except me.

For starters, I ordered Ceviche Mixto to share with everyone. It was a refreshing dish mixture of seafood marinated with some citrus juice served with sweet potato and corn. I actually requested to remove the corn but they might forget. BIL tried them and he said they were too dry and weren’t that great.

Then each of us ordered our own dish, little we knew that the dishes served in big portion!

I ordered Lechon Adobado (pulled pork roasted in red wine and Aji Panca sauce served with either mashed yams or garlic mashed potatoes)-guess which side did I order? 😀

I asked the waiter to make sure there’s no wheat/flour added as sauce thickener. The waiter was nice enough answering my questions regarding the dishes.

Hubby K ordered Lomo Saltado (stir-fry fillet mignon strips with onions, tomatoes, french fries sauted in soy sauce served with either white or brown rice). He requested the waiter to sub the french fries and rice with 2 side salad dish instead.

Overall the dishes were super yummy! The pulled pork was super tender and had that melt-in-your-mouth texture. Despite the yumminess, we still couldn’t finish our dishes so we boxed them (yay for instant left-overs!) Afterward, BIL and his wife went back to work and we drove off to Hubby K’s second interview and then came back home after being stuck in the traffic for at least 1 hour.

We weren’t super hungry for dinner so we kept them simple: left over protein with some fat and veggies.

Our Saturday was pretty mellow and simple. I took day off from working and just chilling and made simple quick fix dishes since we had left overs from Friday.

And we had dinner at the in-laws.

So that’s pretty much it. I admit I might miss these free times that I’ve been having for the past 4 months but hey someone gotta bring home the paycheck to cover the bills and food expense right?!
