This dish is super simple, easy and healthy. It’s good to be paired with your salad or just by itself as an appetizer.

Baked Stuffed Pears (Inspired by Allie’s Goat Cheese Stuffed Pears)
Ingredients:
2 Bosch Pears – sliced lengthwise (or use any other pears)
Some left over Guacamole or just mash 2 ripe avocados, drizzled with some salt and fresh squeezed lemon juice)
1 Tbsp walnuts
1 Tbsp almonds
1 lemon

Directions:
1. Scoop out core of the pear with spoon or if you’re fancy, you can use a melon baller like Allie did.

2. Crushed the almonds and walnuts (or use any nuts you have in hand)

3. Mix in the crushed nuts into guacamole or your homemade mashed avocado. Drizzle with fresh squeezed lemon juice.

4. Stuffed the mixture into the pears

5. Line up the pears on the baking dish. Squeeze the remaining lemon juice over. Add about 2 Tbsp water on the baking dish.

6. Bake around 10 minutes in 350°F

7. Serve over a bed of spring mix salad or any veggies of your choice!

The sweetness from the pears complements the slight tartness of the lemon juice. Next time I might want to add more guacamole fillings to the pears.
