    Great job with the Pho inspired broth. A lot of people don’t do or don’t know about the blanching step which I find very important. Glad you didn’t skip that step. Pho is one of my favorite Vietnamese dishes. Your caramelized chicken legs look delicious! Great tip about the paper towel. Hope you enjoyed your weekend.

      Blanching is important or else the soup will appear cloudy…totally agree w/ you.
