A Quiet Thanksgiving Day
Happy Thanksgiving to those who are celebrating in the US! How was your Thanksgiving Day so far? Sadly, Hubby K has to go back to work tomorrow and so do I although I’ll be working from home for half day.
Anyway, this year we’re having a quiet Thanksgiving Day. My in-laws are not going to have a family gathering since my brother-in-law and sister-in-law already have plans of their own so in the end it was just the two of us at home, having a very quiet and intimate Thanksgiving dinner.
We didn’t have a full blown turkey, but my Garlic and Yam Roasted Chicken was a good substitute for that.
For the veggie dish, I made a simple cabbage “noodles” & zucchini tagliatelle stir-fry. (Ok the pic below was taken during lunch time, which in fact was cabbage “noodles” with sliced bok choy instead, but it was the same idea).
And for a side dish, I made Carrot Souffle, courtesy of The Food Lovers Primal Palate. 🙂 The only modification I did in this recipe, I used regular carrots instead baby carrots and 3 egg yolks instead 3 eggs.
Originally, I was about to make Coconut macaroon from Make It Paleo cookbook, but then I ran out of time. Oh well, maybe tomorrow? 😀

How was your Thanksgiving Day? Do you have to go to work the next day or are you going to shop for Black Friday madness?
