Today I had such a good meals from breakfast to dinner. After I finished my workout, I made the usual oatmeal cooked in almond milk that I made on Sunday, topped generously with non fat plain yogurt and some pb. Gosh, I couldn’t get sick eating oats for couple days in a row now! It was so good and super filling.

Before I always thought oats didn’t fill me up at all. Now I know why. Because in the past, I didn’t have a bowl of oatmeal, more like a small cup of plain oats, with no toppings. Of course that wasn’t enough! Or maybe my appetite got increased ever since I exercise more often? Anyway, I packed another cup of plain yogurt with some Kashi cereal for my second breakfast at work.

And I love my lunch that I packed yesterday! Saute mixed veggies and 4 eggs omelet (2 egg yolks, 4 egg whites).

As usual I had my 2 fruit servings during the day. No pics, but you got the idea (green grapes, orange, peach and blueberries).

My brother prepared dinner today. He made saute shrimps with mixed veggies and I boiled more veggies (green beans and bok choy).
He also baked the remaining chicken legs that my hubby marinated last night.

I’ve been craving for pizza lately but I don’t want to spend the extra time to make the dough from scratch etc and neither I want to buy those frozen pizza. So the solution? I improvised making my own pizza by using whole wheat pita bread, topped with fresh tomatoes, some baked chicken meat, chopped green onions, and shredded mozzarella cheese.

Bake in my convection oven for 350 F for about 15 minutes and voila! My pizza is done and it’s super yummy. Not to mention healthy and the outer part of the pita bread was crispy like a chip! Yum yum.
DONE!

not forgetting the veggies of course..and some shrimps.
