Chilling and Relaxing
I feel a lot better today thanks for a good night sleep and probably the weather as well. It wasn’t sunny, in fact it was kinda gloomy and cold but I actually enjoy this kind of weather, especially to sleep in.
Btw if you recall, today is the last day of March, which means my March Challenge has come to end. I am pretty happy to report that I stick to my March Challenge pretty good, despite certain hiccups. That’s a good thing of logging in every single workout that I did for the entire March and tagged them properly so I could just see how I did. Apparently, I only took 2 complete rest days this entire month (that was 2 weeks ago when work was super crazy).
To wrap up my last day of March Challenge, I treated myself with Zuzana’s older Bodyrock.tv workout: 600 reps Sexier Body Workout.
Ironically this was my third time doing this workout and still found it pretty though although I managed to beat my previous time and I think my forms were a lot better as well.
And do reward myself, I had quite a breakfast!
Then we went off to do our grocery shopping at three different places. Farmers market was to pick up some berries, eggs and herbs, then Whole Paycheck to get some grass-fed beef. Originally I was going to get some grass-fed oxtails and bones but they didn’t have them in stock like they told me. Apparently their Thursday order didn’t come in so I just got the grass-fed beef shanks instead. Well not bad. The last pit stop was at SuperKing Market where we picked up some kosher chicken legs, veggies and spices.
After I got home, I quickly assembled the ingredients to make bone broth with the grass-fed beef shanks.
Pan seared them prior dumping them in the pressure cooker.
It was a perfect day to enjoy a bowl of warm meaty bone broth an hour and half later.
Paired up with some of my yesterday’s packed lunch.
For dessert, we enjoyed a bowl of fresh strawberries that we picked up at farmers market today.
And I also prepared some ground meat for tomorrow’s meal. I’m trying Merguez Meatballs recipe from The Clothes Make the Girl and so excited to find out the results tomorrow!
I’m still quite full from my late lunch so either I skip dinner or just had something light – another bowl of bone broth perhaps and some berries.
Tomorrow I’m planning to take a full day of rest from working out and focusing on meal preparation instead. So itching to try this recipe that my co-worker told me about.
