One Ingredient Steamed Whole Chicken
This is the EASIEST, SIMPLEST chicken dish ever and it can’t be more Paleo than this!
Ingredients:
1 whole fresh free range chicken (in Chinese it’s called 黃毛土雞 – lit. translated Yellow feather dirt chicken)
Salt
Directions:
1. Rub the entire chicken (even inside the cavity) liberally with salt. Basically the salt is used to bring up the chicken taste more. Use your own judgement on how much salt you’re using. Tuck the feet into the cavity. Marinate for at least 4 hours or overnight for best taste.
2. Steam on high heat for about 40-45 minutes or until done.
Is it weird to cook the ENTIRE chicken (including the neck, head and the feet as well?)
The chicken yielded some stock – reserve it, skim off the fat when it’s cold and use it for chicken stock. Just make sure to add more water because it’s pretty salty!
Cut up the chicken and there you go!
This chicken taste/meat texture is completely different even from those free range/organic/pastured ones that you got from your farmer’s market/WF/TJ etc. This chicken meat is a bit chewier, less fatty and more tasty.

Wow, this looks so simple and delicious! And I love the idea of steaming the whole thing! (Pressure cooker? :D) I think I’ll buy a whole chicken today and give it a try, finally! You delicious recipes have gradually convinced me! Let’s see if I can get one with out a head and neck, though. 😉
I didn’t use pressure cooker just regular steamer…make sure it’s on high so put enough water 🙂 The main taste of this dish is mainly the type of the chicken you got. Good luck and let me know how it turns out
I made chicken thighs today (didn’t get a whole chicken at the supermarket), and they turned out yummy! However, I didn’t steam them, but stewed them in a pot with a little water. I also seasoned them with garlic, rosemary, and other stuff. Really good! Will make recipe post soon! And thank you so much, Jos, without you I’d never have dared to make things like that! 🙂

Actually it’s the chicken type that I got (yellow feather dirt chicken – how it’s literally translated from Chinese) – their skin is yellow naturally after cooked.

Yes, super simple! My mom steams it like this sometimes. Not weird for me to steam the whole chicken, I’m used to seeing that. Love that you used free range chicken. It’s really tastes much different. Have a great weekend, Jos!
