So after months of drooling over Nom Nom Paleo’s assorted mini frittata muffins, I decided to make some batch for my Primal on the go snacks/breakfast.

Mini Egg Salsa Muffins
Ingredients:
6 eggs
About 1/4 cup coconut milk (I added this to finish off the coconut milk that’s been sitting in my fridge)
12 oz medium salsa (got mine on sale from Fresh and Easy)
Salt and pepper

Directions:
1. Beat 6 eggs – season with salt and pepper and add in the coconut milk – stir until combined
2. Grease muffin paper liners with oil or ghee

3. Scoop about 1 Tbsp of salsa into the muffin liners

4. Pour in the egg batter until about 3/4 full- unlike traditional muffins, these won’t rise up that much

I ended up with 16 muffins (I ran out the muffin liners & salsa for the last 2 so I just greased the muffin tin and pour in the egg batter)

5. Preheat oven to 350°F – bake for about 20-25 minutes

6. In the last 5 minutes, change the setting to broil – cook for another 3 minutes- be careful not to burn them!

Done!

The ones without the salsa filling actually puffed up more!

Now I have my Primal breakfast/snacks ready!
