Has the Daylight Saving Time affected you?
It surely affected me..sort of – I got up at 8:00 am (which was technically 7:00 am prior the Daylight Saving Time) and proceeded with my morning workout. 12 minutes interval training ended up 22 minutes because I forgot to do one of the exercise and didn’t realize it until I went thru the whole round and the timer still kept going.
But it gave me a nice sweaty workout, perfect to kick off my Sunday morning.
Post workout meal -noshed on these roasted kabocha slathered with coconut oil…YUM!
Paired up with my usual loose leaf tea. DOUBLE YUM!
I did my house chores (vacuuming the carpeted area, including the 4 fly stairs -one by one!) yesterday so today I could sit and relaxed a bit.
Not a total relaxed day- had to do 3 loads of laundry.
Finally did our taxes! We did it our own – no need to pay someone to do it.
I felt a little creative with our lunch so I made Baked Stuffed Pears and Roasted 100% Organic Grass Fed Beef I got from Sprouts with Muir Glen Fire Roasted Tomatoes and arranged everything nicely.
K’s plate – he doesn’t really like raw veggies, so I steamed some nappa cabbage for the greens.
This was my first time trying 100% Organic Grass Fed Beef. My opinion? It tasted less fatty than the grain fed and it has a stronger beef flavor.
Today’s beef recipe was super simple that I don’t think it’s even worth its own recipe page.
Roast Beef with Fire Roasted Tomatoes
Basically you just season the beef with salt, pepper and lemon juice-marinate for an hour or overnight.
Topped with Muir Glen Fire Roasted Diced Tomatoes.
Bake for about 1 hour in 300-325°F
Serve with veggies of your choice.

In some ways I do, because the day is longer and I like it when it’s still bright when I get off from work. It feels like my day isn’t over yet. Besides, I dislike driving at night. For some reason people just drive slow when it’s dark.
