    Sorry about the pancakes 🙁
    I’m not sure if it’s the pictures, but did you add the baking powder & soda with the wet ingredients before the almond flour? If so, that could be the problem. I always add the baking powder/soda with my dry, whisk to mix, then add the mixture to the wet.
    The chicken looks delicious! I can’t wait to try!

    Aww, sorry your pancakes didn’t turn out. At least you were able to salvage them and make muffins. I’ve had my shares of kitchen let downs, especially in the baking area. Baking and I aren’t friends ;-). Your chicken looks good. You give yourself too little credit. Happy cooking and baking in 2011 😀

    Seriously, what’s up with this rain? I’ve been trying to fight off a cold for the last week and I’m still feeling crappy — probably because the weather is so messed up!
    I hope you have a good first week back on the grind hehe
