As I planned, I cooked the 2 salmon steaks I got earlier this morning for lunch. It turned out so good, even though I put a bit too many carrots (2 big carrots instead of just 1). The blend of the tomatoes and lemon juice gave its sweet and sour taste just perfectly.
The recipe is very simple:
2 salmon steaks
2 garlic cloves, minced
2 green onions, chopped, separate the green and the bottom part
1 big carrot, diced (I used 2 here)
2 medium size ripe tomatoes, diced
4 Tbsp fresh squeezed lemon juice
Ginger, minced
Salt, sugar, brown sugar to taste

Directions:
1. Pre heat non stick pan in high heat, pour 2 Tbsp cooking oil
2. After the pan is hot enough, pan fried the salmon steaks, turn the heat down to medium high. Cover the pan. Turn over occasionally. Approximately about 5-6 minutes covered.
3. Pour 1 Tbsp cooking oil, turn up the heat back to high, saute the minced garlic, ginger and part of green onions until fragrant
4. Mix in the diced tomatoes and carrots.
5. Pour in the lemon juice, reduce the heat to medium high
6. Put salt, sugar, brown sugar – sorry I don’t have exact measurement for this. Pretty much just taste it until it gets to your desired taste
7. Mix in the remaining green onions. Pour the sauce over the salmon steaks. Serve and enjoy!

For the veggies, I cooked some collard greens. Unfortunately, this one wasn’t that good so in the end I threw them out as nobody would eat it anyway. 🙁

Usually Saturday afternoon is for house cleaning day, but for this warm sunny day, I decided to leave some chores for tomorrow. At least I got to clean the kitchen after marinating the chicken with my experimental “Thai inspired BBQ Chicken sauce“. I don’t have BBQ grill so I might just bake it like how I usually do. We’ll see how it’ll turn out tomorrow!

After cleaning up and killing some ants which randomly roaming around on my kitchen counter, I decided to give myself a little treat.
A nice bowl of chilled plain non fat yogurt with a bit of low fat cottage cheese and 1 fresh yellow peach! So good to have this nice cool snack during this warm sunny afternoon. I enjoyed this goodies while watching some random anime online. Aah, how I missed watching anime, stuff that I used to do a lot during my single days in college over the weekends….pretty nostalgic.

Dinner was very simple. I still had left over salmon from this afternoon so no need to cook more stuff. My brother could do with that and a bowl of white rice. I, on the other hand was craving for egg white omelet, so I made 4 egg white omelet, with some garlic powder and Nori Fumi Furikake (Rice Seasonings) mixed into it. Topped with organic ketchup as usual, some more boiled collard greens (this time I make sure to boil it a bit longer, way more tender than the one for lunch!), the last remaining of baby carrots and some salmon! Delicious!

Now I’m off to watch more anime, while enjoying another nonfat plain yogurt, with the last bit of cottage cheese and red seedless grapes! Yum!!
