Happy Easter to everyone who celebrates. Do you have any fun plans? It’s a beautiful mild and sunny in Southern California but I’m guilty enough not to make a good use to be outdoor to enjoy more sunshine to get more Vitamin D.

Today I opted to have my rest day from working out. So for entire days aside from cooking and stuff, I enjoyed my time reading various blogs and articles.

Here are some snapshots of what I’ve been making in the kitchen.

Pressure cooker curried Lamb Ribs (recipe from Nom Nom Paleo) with some modifications (I used leeks in place of scallions and parsley leaves instead of cilantro. It turned out SUPER YUMMY!)
I made this dish for last night dinner and it was gone quick! I couldn’t stop eating these! Will make more in the future as I still have more lamb ribs in the freezer.

I finally made some spicy sweet potato hash browns as part of breakfast this morning. Served with spicy omelet and some peas and carrots.

Lunch was yummy as well. I adapted a recipe from Lava Lake Lamb to make this Grilled Lamb Ribs with Orange Dijon marinate.

I had some veggies and herbs that need to be cooked soon so I created this mashed up Cauliflower Fried “Rice” in no mean time. There’s no exact recipe for this but the direction is pretty similar to this one. In the mixture: 1 head of cauliflower – grated in food processor, diced red onion, diced onion, garlic, parsley, sweet potato hash brown, seasoned with white pepper, Red Boat Fish Sauce and Coconut Aminos.

Those turned int our lunch which we had quite late. What’s for dinner? Hmm..maybe something simple. I’m not in the mood for more cooking for the rest of the day.

Speaking of which, I have another addictions (*geez)

Salted plantain chips cooked in palm oil from Sprouts Market. I surprised myself that I didn’t devour the entire bag in one sitting. But unfortunately I might overdose on those already. I could feel a pimple is about come out on my chin and it hurts!
ARGH! Looks like my body knows so well when I’m mistreating it with bad food 🙁
