Hello everyone! As I’m typing this, I’m sure most of you are glued on your sofa watching the Oscar. Guess what, I think I made a mistake on my last post regarding the Oscar but seems like nobody caught it..haha.. oh well!

Anyway, what’s new on me? Let’s say I just got my blood work done! I was super excited in some ways since technically it’s been about a year since I started on this Paleo journey and overall healthy and fitness lifestyle. Who’s not excited to see if whatever he/she doing is working or not, right?

I could tell you good news and bad news..well not too bad actually, but not that good either. More on that later.

When in doubt, wrap them in bacon, it won't be disappointing

My HDL level goes up from 76 to 92, despite I’ve been eating a lot more saturated fat (coconut oil, beef tallow and bacon(gasp!) and red meat and my cholesterol ratio goes down from 2.2 to 1.9. Huh, so it totally proves those low fat diet crap totally been deceiving us being good for your cholesterol stuff. In addition, my LDL goes down from 85 to 76. Eating high fat diet definitely increases your total cholesterol, yes indeed it’s true (mine went from 168 to 179) but GUESS WHAT, it’s the HDL that goes up! Kudos to that!

So it’s good, right? Yes totally.

But I’m far from being perfect. My Vitamin D 25-OH is low – only 18 (it needs to be at least 30ng/mL)

The doctor suggested me to take Vitamin D supplement that’s 50,000 units caps once a week for 9 weeks and get my Vitamin D re-checked. Knowing myself, I don’t want just take one person’s opinion so I started to ask around and read more stuff. I even asked some question to Whole9, Chris Kresser and Dr. Kruse on their facebook to get some opinions. Dr. Kruse has an informative post on his blog regarding Vitamin D. Honestly, the post is quite long and I had to read it a couple times to get a good grasp about it. Let’s just say I’m a slow reader.

One thing for sure, all three of them agreed that my Vitamin D level is quite low and I DEFINITELY NEED to take some supplement. In addition to that, I’ll continue to have my lunch outdoor to catch as much rays as possible.

So far I’m more towards Chris Kresser’s suggestion of taking butter/cod liver blend from Green Pastures since it’s a more natural way and I know myself for disliking taking any synthetic supplements.

Well to lighten myself up I whipped up a batch of homemade mayo. Hubby K helped me drizzled the light olive oil so this time the mayo turned out PERFECT!

Plus I made Smoky Braised Roast Beef which hopefully will enough to feed us until tomorrow’s dinner!

In addition to that, I also ate a bag of kettlecorn that I got from Farmer’s Market yesterday. Yes I finished the entire bag already. It was so good, a nice blend of salty and sweet just perfect. Afterward my mouth felt dry for the entire day and drinking tons of water didn’t help much either.
