Remember these bottles?

Those babies contain my newly spice rub which I came up and it made my lamb shoulder dish taste yummy! This spice rub might also good for any other ruminants such as beef, goat and if you are vegetarian, might also could spice up your tofu dish. I haven’t tried it with any poultry and seafood yet so not sure how it will turn out.

Anyway enough rambling and here what I did to make this spice rub.

“Tobacco” Spice Rub
Ingredients
1-2 tsp garlic powder
1-2 tsp salt
1 tsp ground cloves (I grounded my own whole cloves which yield about 1 tsp ground cloves)
1 tsp ground mixed peppercorns
1-2 tsp coriander powder
1 tsp cocoa powder
1 tsp grated nutmeg

Mix all the dry ingredients and store them in an airtight container. Rub generously to any meat of your choice for about 1 hour or overnight.

Here’s my steam to baked lamb shoulder marinated with this spice rub and everyone LOVES it.

You might wonder why “tobacco?” Well, I don’t know about you, but the smell of freshly ground cloves reminds me a lot of tobacco smell. šŸ™‚
